The Copious With Saint-Fidèle Old Swiss
Ingredients

1/4 cup (60 ml) Le Saint-Fidèle Old Swiss cheese, grated
1/4 cup (60 ml) crab meat, shredded
1/4 cup (60 ml) apples, diced
1/4 cup (60 ml) celery root, grated
1 tbsp. (15 ml) saffron mayonnaise, home-made
Salt and freshly ground pepper

Bread chosen: Brioche roll

Preparation

In a bowl, mix the crab, apples, celery root and cheese together. Mix in the saffron mayonnaise. Add salt and pepper.

Slice the brioche roll open. Top one half with the crab mix. Cover with the other half of the brioche roll.

Topping
Saffron mayonnaise
2 tbsp. (30 ml) mayonnaise, store-bought
1 tsp. (5 ml) lemon zest
1 small garlic clove, chopped
1 pinch of saffron
Salt and freshly ground pepper

In a bowl, mix all the ingredients together. Set aside in the refrigerator.
