The Legendary Ancêtre Emmental
Ingredients

2 slices L’Ancêtre Emmental cheese, grated
2 slices Serrano or Prosciutto ham
1 egg, poached
3 tbsp. (45 ml) hollandaise sauce, home-made
Freshly ground pepper

Bread chosen: English muffin

Preparation

Slice open the English muffin and toast it lightly. Place the ham and cover with the poached egg. Top with hollandaise sauce and sprinkle with cheese.

Topping
Hollandaise sauce
1 tbsp. (15 ml) milk
2 egg yolks
1/2 cup (125 ml) butter, diced
1 tsp. (5 ml) lemon juice
Salt and freshly ground pepper

In a saucepan, over low heat, beat the milk and eggs together until the mixture slightly thickens. Remove from heat.

Add the butter in small amounts, beating constantly to get a smooth mixture.

Add the lemon juice. Season with salt and pepper. Set aside.
