Semi-soft, brushed rind cheese made with thermized cow's milk. Earthy aroma with a light tartness that borders on fruity. A buttery aroma with a light hazelnut flavour that enhances with age. It is available from the cheese maker, in specialty grocery stores and cheese shop, and some supermarkets.
